Health-promoting Potential of Cereals, Grain Fractions, and Beans as Determined by Their in Vitro Bile Acid Binding

The health-promoting potential (lowering the risk of obesity-related diseases) of foods has been determined by in vitro bile acid binding under physiological conditions. Whole grains, cereals made from whole grains, bran (rice, oats, and barley), and legumes (garbanzo and Bengal gram) were observed to promote health. Whole grains, cereals, and snacks made with whole grains or bran and legumes, when consumed regularly, could lower the risk of cardiovascular disease and certain cancers and improve public health.
