Abstract

Changing consumer tastes, the rise of e-commerce, and a hypercompetitive retail environment are causing big food companies to look for new ways to innovate and drive top-line growth. The answer for a growing number of food companies has been to engage with food entrepreneurs in some fashion, often through an innovation “incubator” or “accelerator.” These innovation incubators and accelerators are helping to build an innovation ecosystem that can benefit both entrepreneurs and established companies. Aspiring entrepreneurs can get assistance as they build a business, while food and ingredient companies may find acquisition targets and equity investments and gain greater insights into changing consumers and an infusion of an entrepreneurial mind-set and approach.
