Science & Trends
The latest generation of near-infrared (NIR) spectroscopy systems designed for on-line measurement of grain, flour, and semolina properties opens up new possibilities for measuring the amount of gluten in flour, the ability of flour to absorb water, and the extent to which starch has been damaged. CFW is freely accessible to members as a benefit of your membership. Read about this fascinating analytics technology now!
McCleary et al. describe a method for measuring digestible starch and sucrose in the presence of fructo-oligosaccharides. The method selectively measures available and unavailable dietary carbohydrates, allowing accurate labeling of food products.
