This Month at Cereals & Grains Association
Cereal & Grain 19
We had a successful annual meeting in Denver, Colorado, this year—almost 700 attendees connected and collaborated with experts and peers from across our grain-based food industry. You are the scientific force behind one of the fastest growing, most dynamic segments of the food industry. We are, indeed, fostering food evolution.
Science & Trends
Armstrong et al. compare the effectiveness of four instruments to measure rice chalk. All instruments were effective in classifying chalk, but their level of accuracy depended on how chalk is defined.
Byung-Kee Baik describes favorable characteristics and effective bran pretreatment methods, as well as optimal timing of bran incorporation into dough, for improved processing and product quality of whole wheat bread.
Cereals & Grains Association is proud of its members' many accomplishments that have advanced the association and the field of grain science.
