“Pulse Crops for Health,” covers various aspects of pulses, including their health benefits. Consumption of pulses (peas, beans, lentils, and chickpeas) provides health benefits rivaled by few other foods. These nutrient-packed legumes offer protective and therapeutic effects to such chronic health conditions as obesity, cardiovascular disease, diabetes, and cancer. Human clinical trials and ongoing research are investigating and substantiating the role of pulses in these lifestyle diseases, providing health professionals, the food industry, and consumers with the evidence to promote and incorporate pulses as part of a healthy diet.
