Ancient Grains and Pseudocereals: Chemical Compositions, Nutritional Benefits, and Roles in 21st Century Diets

Studies have shown that inclusion of whole grains in a daily diet can reduce the risk of developing certain cancers and cardiovascular disease. As more becomes known about the nutritional benefits of nutrient-rich whole ancient grains and pseudocereals, the demand for food products that incorporate these ingredients is increasing, especially regarding their inclusion in gluten-free foods. This article describes the chemical compositions, potential benefits, and dietary roles of the ancient grains sorghum and teff and the pseudocereals amaranth and quinoa.
