In an era when recommendations for how to promote health and wellness seem to shift with the tides, not even the status of breakfast as the most important meal of the day is immune to scrutiny. Consumers looking to reap potential health benefits or who are simply hungry consider breakfast a meal worth waking up for, and almonds included as part of any type of breakfast product are a popular attraction. Product developers have a wide variety of ingredients from which to choose; however, few ingredients have more to offer than almonds. Almonds are a natural, wholesome, and nutrient-rich food that is high in vitamin E, magnesium, protein, fiber, and unsaturated fats. Almonds top all other tree nuts in the amounts of protein, fiber, calcium, riboflavin, and niacin they deliver. As a bonus, they are available in more forms than any other tree nut—whole, sliced, slivered, chopped, diced, ground, blanched, natural, roasted, and more. This article describes some of the creative ways in which food developers can incorporate almonds as a key ingredient in breakfast products.
