A Multi-Glycomics Characterization of Food
Carbohydrates often represent the largest component of food. It is also the least structurally characterized and the most misunderstood. They can be small metabolites such as the simple sugars or large polymers with unique monosaccharide compositions, linkages, and even branching. For this reason, carbohydrates are often listed as various components in food data bases such as simple sugars, fiber, starch, and even “dark matter”. The lack of structural details makes nutritional guidelines imprecise and clinical trials questionable. The lack of structures also limit the goal towards personalizing nutrition. In this presentation, a multi-glycomic platform is described that first separates carbohydrates in alcohol-soluble and alcohol-insoluble fractions. The alcohol soluble fractions are characterized with advanced chromatography and mass spectrometry (LC-MS) to provide free mono, di, and oligosaccharide analysis. The alcohol insoluble fractions contain polysaccharides that are analyzed by three distinct LC-MS methods that yield the monosaccharide analysis with absolute quantitation, linkage analysis with extensive coverage (>100 linkages), and the polysaccharide quantitation. These methods combined provide the most extensive characterization of food carbohyhdrates. They are being used to characterize food in large feeding trials.

Food Adulteration/Authenticity: How Do We Secure Our Supply Chains? Organized by the Molecular Biomarkers Tech Committee
Cereals and grains provide a majority of calories for the world’s population and it is important that these crop commodities are correct in their identity. Adulteration of cereals and grains by materials of lower quality, or that do not meet the performance or contract requirements can be of significant impact to producers and consumers. Fraud can involve the substitution by other grains, addition of other materials, and can have human health implications. Adulteration of pulses has not been an issue in the past due to short supply chains but with the growth in meat substitutes, and commodification of some products, it is beginning to be of concern. This session will discuss the types of adulteration that are affecting or have the potential to impact supply chains. We will then discuss appropriate analytical testing methods or other approaches that have or are being developed in order to protect grain, cereals and pulse products from intentional or unintentional adulteration.

Pulses: Taste, Flavor, Sensory, Functionality Organized by the Pulse and Legume Tech Committee
The global consumer demand for pulses and pulse ingredients is projected to grow significantly in the coming years. However, utilizing pulses and pulse ingredients in diverse food applications is highly challenging due to the knowledge gap in key features, including sensory, flavor and functional characteristics, specifically for pulse protein and flour ingredients. This session will present the knowledge about methodologies used to identify the sensory, flavor and functional characteristics of pulses and pulse ingredients. The knowledge delivered in this session can be highly useful for food companies looking for alternative food ingredient sources (e.g., proteins, flours, fibers) to meet their needs for designing new generation plant-based foods, such as meat, dairy, egg, and seafood alternatives and nutrient-dense food applications, e.g., protein and fiber-dense snacks.
