Introduction to Chapter

Various products and various markets require different textures, and the texture of a specific product must be consistent and fully controlled. Texture can be evaluated subjectively or determined by physical measurements. Subjective evaluations such as the finger test and mouthfeel are often every bit as important as physical measurements, especially when new products are developed. Any method for determining physical texture should be closely correlated with a sensory evaluation, and the measurement should be fast and reproducible. Instrumental evaluation of texture may include measurements of a number of different physical characteristics.
