Introduction to Chapter

Foods containing alternative sweeteners are developed and marketed to meet the needs of specific consumer groups, e.g., those who wish to lower their caloric intake by decreasing the amount of sugars they consume and those who wish to lower their risk of dental caries. Diabetics are also concerned about sugar levels in foods. While a final product may meet the needs of all of these consumers, it is important that the product developer understand the factors behind each of these consumer needs.
