Introduction to Chapter

For many years, workers in the color area had to cope with at least a dozen color systems, including both visual and instrumental approaches. Today, five systems are in general use—one visual and four instrumental. Many visual systems exist, but the one most commonly used in the United States is the Munsell color solid (1). The instrumental systems are the CIE XYZ, the Judd-Hunter L a b, the CIELAB L* a* b*, and the CIELCH L* C* H*. The visual systems are certainly the simplest and require little interpretation. The instrumental systems do require interpretation because they are rigorous and reproducible for ideal samples such as those that are completely opaque or perfectly transparent with no light scattering. Unfortunately, very few foods fit either category since most foods both transmit and reflect light.
